Ingredients
1 head cauliflower, cut into florets
3 tablespoons olive oil
3 cloves garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
⅓ cup grated Parmesan cheese
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Preheat the oven to 425°F (220°C). Line a large baking sheet with parchment paper if desired.
2. Cut the cauliflower into evenly sized florets and pat them dry with a clean towel.
3. In a large mixing bowl, toss the cauliflower with olive oil, minced garlic, salt, and black pepper until well coated.
4. Spread the cauliflower in a single layer on the prepared baking sheet.
5. Roast in the oven for 25–30 minutes, flipping halfway through, until golden and crispy on the edges.
6. Remove the tray, sprinkle Parmesan cheese over the roasted cauliflower, and return to the oven for 5 minutes until the cheese melts and browns slightly.
7. Garnish with chopped parsley if using. Serve warm and enjoy.
Notes
Dry the cauliflower thoroughly after washing to ensure it roasts instead of steaming.
For a bolder garlic flavor, use roasted garlic instead of raw.
Grate your own Parmesan for the best melt and flavor — avoid pre-shredded varieties.
