Ingredients

2 tablespoons olive oil or butter

1 medium onion, diced

3 cloves garlic, minced

3 carrots, sliced

2 celery stalks, diced

3 medium potatoes, peeled and diced

2 cups broccoli florets

1 cup corn kernels

4 cups low-sodium vegetable broth

1 cup heavy cream or half-and-half

1 teaspoon dried thyme

1 teaspoon dried parsley

salt and pepper to taste


Instructions

1. Heat olive oil or butter in a large heavy-bottomed pot over medium heat.

2. Add diced onion, garlic, carrots, and celery. Cook for 5–7 minutes until softened.

3. Stir in potatoes and broccoli, sauté for another 2 minutes.

4. Pour in vegetable broth and bring to a gentle boil.

5. Reduce heat and simmer for 15–20 minutes, until potatoes are tender.

6. Add corn kernels, thyme, and parsley. Stir to combine.

7. Slowly pour in heavy cream and stir gently. Simmer for another 5–7 minutes without boiling.

8. Season with salt and pepper to taste.

9. Serve warm, garnished with herbs if desired.

Notes

For a dairy-free version, substitute heavy cream with full-fat coconut milk or almond milk.

To thicken the soup naturally, mash some of the cooked potatoes directly in the pot.
