Ingredients

2 lbs carrots, peeled and sliced

2 tablespoons honey

2 tablespoons olive oil

3 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon fresh thyme or rosemary (optional)


Instructions

1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat.

2. In a mixing bowl, whisk together olive oil, honey, minced garlic, salt, and pepper until smooth.

3. Add sliced carrots to the bowl and toss until fully coated in the honey garlic mixture.
