This garlic butter steak bites & potatoes recipe is rich, flavorful, and ready in one skillet. With tender sirloin cubes, buttery baby potatoes, and a fragrant garlic-parsley sauce, it’s the perfect comfort meal that feels fancy without the fuss.
Ingredients
1.5 lbs sirloin steak, cut into 1-inch cubes
1.5 lbs baby potatoes, halved
4 cloves garlic, minced
3 tablespoons unsalted butter
2 tablespoons olive oil
2 tablespoons fresh parsley, chopped
1 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Halve the baby potatoes and parboil them in salted water for about 10 minutes until just fork-tender. Drain and set aside.
2. Pat the cubed steak dry with paper towels. Season with salt and pepper.
3. Heat 1 tablespoon of olive oil in a hot skillet over medium-high heat. Sear the steak bites in batches, cooking each side for about 2-3 minutes until a golden crust forms. Remove from pan and keep warm.
4. Add remaining olive oil to the skillet and sauté the parboiled potatoes until golden and crispy.
5. Reduce heat to medium-low and add butter and minced garlic. Stir and cook for 1 minute until garlic is fragrant.
6. Return steak bites to the skillet. Toss everything together until coated in garlic butter.
7. Sprinkle fresh parsley on top and serve immediately.
Notes
Patting the steak dry before searing helps develop a better crust.
Don’t overcrowd the pan—sear in batches for even browning.
Fresh garlic makes a big difference—avoid jarred garlic if possible.
