Ingredients
40 Ritz crackers
25 soft caramels
2 tablespoons heavy cream
10 ounces white chocolate or almond bark
3 tablespoons holiday sprinkles
Instructions
1. Unwrap the caramels and place them in a microwave-safe bowl or saucepan with heavy cream. Melt gently, stirring frequently until smooth and pourable.
2. Lay 20 Ritz crackers on a parchment-lined baking sheet. Spoon or pipe about a teaspoon of caramel onto each one.
3. Top with another Ritz cracker and press gently to create sandwiches.
4. Melt white chocolate or almond bark in a microwave or double boiler until smooth.
5. Using a fork, dip each cookie sandwich into the melted chocolate, coating completely. Let the excess drip off.
6. Place dipped cookies back on the parchment paper and immediately top with sprinkles.
7. Allow cookies to set at room temperature or chill until firm.
8. Serve, store in an airtight container, or freeze for later enjoyment.
