Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1/2 cup brown sugar
2 large ripe bananas, mashed
1 can (8 ounces) crushed pineapple with juice
2 large eggs
3/4 cup vegetable oil
2 teaspoons vanilla extract
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
3/4 cup chopped pecans, plus extra for topping
Instructions
1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch sheet pan and optionally line with parchment paper.
2. In a large mixing bowl, whisk together flour, granulated sugar, brown sugar, baking soda, cinnamon, and salt.
3. In another bowl, mix the mashed bananas, crushed pineapple with juice, eggs, vegetable oil, and vanilla extract until smooth.
4. Add wet ingredients to the dry mixture. Stir gently with a rubber spatula until just combined.
5. Fold in chopped pecans without overmixing.
6. Pour batter into the prepared pan and spread evenly.
7. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.
8. Let cake cool in the pan on a wire rack completely before frosting.
9. Frost with cream cheese frosting and sprinkle additional chopped pecans over the top.
Notes
Don’t overmix the batter once you add the wet ingredients—this keeps the crumb soft and tender.
Use room temperature eggs for easier blending and better texture.
Chill the cake before frosting for a cleaner, firmer finish.
