Description

Sticky-sweet grilled chicken glazed in honey-chipotle sauce pairs with a vibrant corn salsa full of fresh veggies and citrus. This hearty yet healthy bowl is perfect for lunch, dinner, or meal prep.


Ingredients

1.5 lbs boneless skinless chicken thighs or breasts

2 tbsp honey

12 chipotle peppers in adobo sauce (or 1 tbsp adobo sauce only for milder heat)

2 tbsp lime juice (plus extra for serving)

1 tbsp olive oil

1 tsp garlic powder

1 tsp smoked paprika

Salt and pepper to taste

For the Corn Salsa:

1.5 cups corn kernels (fresh, grilled, or canned)

1/2 cup diced tomatoes

1/2 cup chopped cucumber

1/4 cup chopped fresh cilantro

1 tbsp lime juice

1 tbsp olive oil

Salt and pepper to taste

Optional for Serving:

Cooked rice or greens

Avocado slices

Lime wedges

Hot sauce


Instructions

  1. Marinate the Chicken
    Whisk together honey, chipotle, lime juice, olive oil, garlic powder, smoked paprika, salt, and pepper. Coat chicken in marinade and refrigerate for 30 minutes to overnight.
  2. Cook the Chicken
    Grill or sear chicken over medium-high heat until cooked through and charred (165°F internal temp). Let rest and slice.
  3. Make Corn Salsa
    Combine corn, tomatoes, cucumber, cilantro, lime juice, olive oil, salt, and pepper. Stir and set aside.
  4. Assemble the Bowls
    Layer greens or rice, top with corn salsa, sliced chicken, and optional toppings like avocado and lime.
