Ingredients

1 ½ cups all-purpose flour

½ cup granulated sugar

½ cup brown sugar

2 teaspoons baking powder

½ teaspoon salt

¾ cup milk

2 large eggs

½ cup unsalted butter, melted

⅓ cup honey

1 teaspoon vanilla extract

1 cup chopped pecans (plus more for topping)


Instructions

1. Preheat the oven to 350°F (175°C) and lightly grease a 9×5-inch loaf pan or line it with parchment paper.

2. In a medium bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt until combined.

3. In a large bowl, whisk together the eggs, milk, melted butter, honey, and vanilla extract until smooth.

4. Gradually add the dry ingredients to the wet mixture, stirring gently just until combined. Do not overmix.

5. Fold in the chopped pecans, reserving a handful to sprinkle on top.

6. Pour the batter into the prepared loaf pan and smooth the top. Sprinkle remaining pecans over the batter.

7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.

8. Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

9. Optional: Brush warm bread with additional honey butter for a glossy finish.

10. Slice and enjoy warm or at room temperature.

Notes

Toast your pecans beforehand for deeper flavor and extra crunch.

For easy removal, line the pan with parchment that overhangs the sides.

Don’t overmix the batter—stop as soon as the flour disappears for the softest crumb.
