Ingredients
1 cup unsalted butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
3/4 cup finely chopped pecans
Instructions
- In a large bowl, cream together the softened butter and powdered sugar until light and fluffy.
- Mix in the vanilla extract.
- Add flour and salt, and mix just until the dough forms.
- Fold in the chopped pecans until evenly distributed.
- Roll the dough into 1-inch balls or shape into a log and slice.
- Chill the shaped dough in the fridge for 30 minutes.
- Preheat the oven to 350°F (175°C).
- Bake for 12-15 minutes or until edges are lightly golden.
- Let cool on baking sheet for 5 minutes before transferring to a wire rack.
