Ingredients
1 cup all-purpose flour
1/2 cup grated Parmesan cheese
1 tablespoon finely chopped fresh rosemary
4 tablespoons unsalted butter, cold and cubed
1/4 cup cold water (as needed)
1/2 teaspoon salt
1 tablespoon olive oil (for brushing)
Instructions
1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper. Lightly flour your work surface.
2. In a mixing bowl, combine flour, Parmesan, rosemary, and salt. Whisk until well blended.
3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
4. Add cold water gradually, mixing until the dough just comes together. Do not overwork.
5. Roll dough out to 1/8-inch thickness and cut into desired shapes.
6. Transfer to the baking sheet and brush tops with olive oil. Optional: sprinkle extra sea salt.

Notes
