Ingredients

1 lb ground beef

1 small yellow onion, chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

2 tbsp tomato paste

4 cups beef broth

1 ½ tsp Italian seasoning

1 tsp salt

½ tsp black pepper

2 cups bowtie pasta (or 8 broken lasagna noodles)

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated parmesan cheese

2 tbsp fresh parsley, chopped (for garnish)


Instructions

1. In a large soup pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Break it up as it browns. Drain any excess grease.

2. Add chopped onion and minced garlic to the pot. Sauté for 3–4 minutes until fragrant and soft.

3. Stir in crushed tomatoes, tomato paste, beef broth, Italian seasoning, salt, and black pepper. Bring to a boil, then reduce to a simmer.

4. Add the uncooked bowtie pasta and simmer for about 10 minutes, stirring occasionally, until the pasta is al dente.

5. Turn off the heat. Stir in ricotta and mozzarella cheeses until melted and fully combined.

6. Ladle into bowls. Top with a sprinkle of parmesan and chopped parsley. Serve hot and enjoy!

Notes

If you plan to store leftovers, consider cooking the pasta separately and adding it to individual bowls to prevent over-softening.

For added nutrition, stir in a few handfuls of baby spinach right before serving.

Want a spicier version? Add a pinch of red pepper flakes during the sauté step.
