Ingredients
6 bone-in, skin-on chicken thighs
3 tablespoons olive oil
2 tablespoons lemon juice
1 teaspoon lemon zest
4 cloves garlic, minced
1½ teaspoons dried oregano
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon chopped fresh parsley (for garnish)
Instructions
1. In a medium mixing bowl, whisk together olive oil, lemon juice, lemon zest, minced garlic, oregano, salt, and pepper until well combined.
2. Add chicken thighs to the bowl and coat them in the marinade. Cover and refrigerate for at least 30 minutes, ideally 2 to 4 hours.
3. Preheat oven to 400°F (200°C).
4. Heat a cast iron skillet over medium-high heat. Place chicken skin-side down and sear for 5–6 minutes until golden brown. Flip and cook an additional 3–4 minutes.
5. Transfer the skillet to the oven and bake for 15–20 minutes, or until internal temperature reaches 165°F (74°C).
6. Remove from oven, let rest for 5 minutes, then garnish with fresh parsley and serve.
Notes
For the crispiest skin, pat the chicken dry with paper towels before marinating.
Use a meat thermometer to ensure doneness without cutting into the chicken.
If you don’t have a cast iron skillet, any oven-safe skillet will work.
