This Hearty Beef & Mushroom Stew is rich, flavorful, and deeply comforting. Loaded with tender chunks of beef, earthy mushrooms, sweet carrots, and aromatic herbs, it’s the perfect one-pot meal for chilly nights. Ingredients

2 pounds beef chuck roast, cut into chunks

1 tablespoon olive oil

2 tablespoons all-purpose flour

8 ounces baby bella or cremini mushrooms, sliced

3 carrots, peeled and chopped

1 yellow onion, diced

2 celery stalks, chopped

3 garlic cloves, minced

2 tablespoons tomato paste

4 cups beef broth

1/2 cup red wine (optional, or sub more broth)

1 tablespoon Worcestershire sauce

1 bay leaf

1 teaspoon dried thyme

1 teaspoon fresh rosemary (or 1/2 tsp dried)

Salt and pepper to taste

Fresh parsley for garnish (optional)


Instructions

1. Pat beef dry and season with salt, pepper, and flour.

2. In a Dutch oven over medium-high heat, heat olive oil and sear beef on all sides until browned. Remove and set aside.

3. Add more oil if needed, then sauté onion, celery, and carrots for 5 minutes until softened.

4. Stir in garlic and tomato paste; cook for 1 minute.

5. Deglaze the pot with red wine or broth, scraping up browned bits.

6. Return beef to the pot. Add mushrooms, Worcestershire, herbs, and beef broth. Stir well.

7. Bring to a simmer, cover, and cook on low heat for 2 to 2.5 hours until beef is fork-tender.

8. Discard bay leaf, taste and adjust seasoning.

9. Serve hot with mashed potatoes, noodles, or crusty bread. Garnish with parsley if desired.

Notes

For best flavor, sear the beef in batches to avoid overcrowding the pot.

The stew thickens naturally as it simmers—avoid over-thickening early on.

Make it a full meal by serving it over mashed potatoes or cheesy polenta.
