With cottage cheese as the secret ingredient, these brownies are creamy, moist, and full of chocolate flavor, all while keeping things light and nutritious.


Ingredients

1 cup cottage cheese

2 large eggs

1/3 cup maple syrup or honey

1 teaspoon vanilla extract

1/2 cup unsweetened cocoa powder

1/2 cup oat flour

1 teaspoon baking powder

1/3 cup chocolate chips (optional, plus extra for topping)


Instructions

1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.

2. In a blender or food processor, combine cottage cheese, eggs, maple syrup, and vanilla extract. Blend until completely smooth.

3. In a mixing bowl, whisk together cocoa powder, oat flour, and baking powder.

4. Pour the wet mixture into the dry ingredients and fold gently with a silicone spatula until just combined.

5. Fold in chocolate chips if using. Reserve a few to sprinkle on top.

6. Pour the batter into the prepared pan and smooth the surface. Top with extra chocolate chips.

7. Bake for 22–28 minutes or until the edges are set and the center has a slight jiggle.

8. Allow brownies to cool completely in the pan before slicing into squares.

Notes

For best texture, chill brownies before slicing if you prefer a firm bite.

If adding protein powder, reduce the oat flour slightly to prevent dryness.
