Description
This Ground Turkey and Rice Soup is a nourishing, easy-to-make one-pot meal packed with lean protein, tender veggies, and fluffy rice. It’s comforting without being heavy, and perfect for make-ahead lunches, family dinners, or a warming meal on a cold day.
Ingredients
1 tablespoon olive oil
1 pound ground turkey
1 cup white rice (long-grain or jasmine)
3 carrots, diced
2 celery stalks, diced
1 medium yellow onion, diced
3 cloves garlic, minced
8 cups low-sodium chicken broth
1 teaspoon salt (adjust to taste)
1/2 teaspoon black pepper
1/2 teaspoon dried thyme
1 teaspoon dried parsley
1 bay leaf
Instructions
1. Heat olive oil in a large soup pot over medium heat. Add diced onion, carrots, and celery. Sauté for 5–7 minutes until vegetables begin to soften.
2. Add garlic and cook for another 30 seconds until fragrant.
3. Stir in the ground turkey. Cook until browned and fully cooked, breaking it up with a spoon.
4. Season with thyme, parsley, salt, pepper, and add the bay leaf.
5. Pour in chicken broth and bring the soup to a gentle boil.
6. Stir in the rice. Reduce heat to low, cover, and simmer for 18–20 minutes or until rice is tender.
7. Remove the bay leaf. Taste and adjust seasoning as needed.
8. Serve hot, optionally garnished with fresh herbs or a squeeze of lemon.
Notes
If using cooked rice, add it during the last 5 minutes of simmering to avoid mushiness.
You can swap in brown rice, but increase the simmer time by 15–20 minutes.
To freeze, slightly undercook the rice so it maintains texture when reheated.
