Ingredients
1 lb ground beef
2 medium sweet potatoes, peeled and diced
1 large bell pepper, diced
2 tbsp olive oil
1 tsp smoked paprika
1 tsp garlic powder
1/2 tsp cumin
1/2 tsp salt (plus more to taste)
1/2 tsp black pepper
1 cup Greek yogurt
2 tbsp chopped fresh cilantro or parsley (optional)
Instructions
1. Preheat oven to 425°F (218°C).
2. In a mixing bowl, toss sweet potatoes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper.
3. Spread sweet potatoes on a sheet pan and roast for 25–30 minutes, flipping halfway through.
4. Meanwhile, heat 1 tablespoon olive oil in a skillet over medium-high heat.
5. Add ground beef, season with cumin, garlic powder, salt, and pepper. Cook, breaking it apart with a spatula, until fully browned and slightly crispy.
6. In the same skillet, add diced bell pepper and cook 5–6 minutes until slightly softened.
7. Assemble the bowl by layering roasted sweet potatoes, ground beef, bell peppers, and a generous dollop of Greek yogurt.
8. Garnish with chopped herbs and serve warm.
Notes
Be sure to flip the sweet potatoes halfway through roasting to ensure even browning.
For crispy ground beef, don’t overcrowd the skillet—cook in batches if needed.
