Ingredients
1 lb ground beef
5–6 medium Yukon Gold or Russet potatoes, thinly sliced
1 small onion, diced
2 cups shredded sharp cheddar cheese
1 (10.5 oz) can cream of mushroom soup
1/2 cup milk
Salt and pepper, to taste
Fresh parsley for garnish (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
- In a skillet over medium heat, cook ground beef and diced onion until browned. Drain excess grease and season with salt and pepper.
- In a small bowl, whisk together cream of mushroom soup and milk until smooth.
- Layer half the sliced potatoes in the baking dish. Top with half the beef mixture, pour over half the soup mixture, and sprinkle with cheese.
- Repeat layers with remaining potatoes, beef, soup, and cheese.
- Cover with foil and bake for 60 minutes.
- Remove foil and bake an additional 15 minutes until top is golden and bubbly.
- Let sit for 5-10 minutes before serving. Garnish with chopped parsley if desired.
