This Ground Beef and Rice Casserole is the perfect weeknight comfort food—hearty, cheesy, and satisfying with every bite. It combines savory ground beef, fluffy white rice, and creamy mushroom soup all baked together under a golden layer of melted cheddar. Quick to prep, easy to customize, and makes fantastic leftovers!
Ingredients
2 cups cooked white rice
1 pound ground beef
1 can (10.5 oz) cream of mushroom soup
1 small yellow onion, chopped
1 teaspoon garlic powder
1 ½ cups shredded cheddar cheese, divided
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon fresh parsley, chopped (optional, for garnish)
Instructions
1. Preheat oven to 350°F (175°C). Grease a 9×13-inch casserole dish and set aside.
2. In a large skillet over medium-high heat, cook ground beef until browned and fully cooked (about 6–8 minutes). Drain excess grease.
3. Add chopped onion to the beef and sauté until translucent, about 3–4 minutes. Season with garlic powder, salt, and pepper.
4. In a large mixing bowl, combine the cooked rice, beef-onion mixture, cream of mushroom soup, and ¾ cup of cheddar cheese. Mix well.
5. Spread the mixture into the prepared casserole dish. Top with the remaining ¾ cup of cheddar cheese.
6. Cover with aluminum foil and bake for 20 minutes. Remove foil and bake another 10 minutes until cheese is melted and bubbly.
7. Let rest 5 minutes before serving. Garnish with fresh parsley if desired.
Notes
For extra flavor, use sharp cheddar and grate it fresh.
Add frozen peas or corn before baking for a veggie boost.
