Grilled Lemongrass Chicken is a juicy, aromatic dish inspired by Vietnamese street food. Marinated in lemongrass, garlic, fish sauce, and lime, it delivers a perfect balance of savory, tangy, and sweet, with a beautiful char from the grill.
Ingredients
4 boneless skinless chicken thighs
2 fresh lemongrass stalks (minced)
3 garlic cloves (minced)
2 tablespoons fish sauce
1 tablespoon soy sauce
1 tablespoon brown sugar or palm sugar
1 tablespoon lime juice
1 tablespoon vegetable oil
Instructions
- 1. Finely chop the lemongrass and garlic. In a bowl, combine with fish sauce, soy sauce, sugar, lime juice, and oil.
- Stir until sugar dissolves. Add chicken thighs, ensuring they’re well coated.
- Cover and refrigerate for at least 1 hour or overnight.
- Preheat grill or grill pan over medium-high heat.
- Lightly oil the grates or pan. Grill chicken 4-5 minutes per side until internal temperature reaches 165°F, caramelized and slightly charred.
- Let rest 5 minutes, then slice and serve.
Notes
For the boldest flavor, use only the tender inner part of the lemongrass stalk.
Don’t skip resting the chicken — it keeps the juices inside and the meat tender.
You can grill this indoors on a grill pan or even sear it in a regular skillet.
