A wholesome and vibrant Mediterranean-inspired bowl, packed with lean grilled chicken, roasted sweet potato fries, crisp veggies, and creamy homemade tzatziki. It’s perfect for meal prep or a satisfying lunch or dinner that nourishes and delights.
Ingredients
2 boneless skinless chicken breasts
2 medium sweet potatoes, cut into fries
1 tbsp olive oil (for sweet potatoes)
1/2 tsp paprika
1/2 tsp garlic powder
Salt and black pepper to taste
1 cup cherry tomatoes, halved
1/4 red onion, sliced
1 small cucumber, sliced
1 cup broccoli florets, steamed or roasted
1/4 cup crumbled feta cheese
For the Tzatziki Sauce:
1 cup plain Greek yogurt
1/3 cup grated cucumber (squeezed dry)
1 garlic clove, minced
1 tbsp lemon juice
1 tbsp fresh dill, chopped
Salt and pepper to taste
For Chicken Marinade:
1 tbsp olive oil
1 tbsp lemon juice
1 garlic clove, minced
1/2 tsp dried oregano
Salt and pepper to taste
Instructions
- Marinate the Chicken: In a bowl, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken breasts and marinate for 30 minutes.
- Grill the Chicken: Heat a grill or grill pan over medium heat. Cook marinated chicken for 5-7 minutes per side or until fully cooked. Let rest and slice.
- Prepare the Sweet Potato Fries: Toss sweet potato sticks with olive oil, paprika, garlic powder, salt, and pepper. Bake at 425°F (220°C) for 25-30 minutes, flipping halfway.
- Make the Tzatziki: In a bowl, combine yogurt, cucumber, garlic, lemon juice, dill, salt, and pepper. Chill until ready to serve.
- Prep the Veggies: Slice cucumber, red onion, and halve the cherry tomatoes. Steam or roast broccoli until tender.
- Assemble the Bowl: In each bowl, layer broccoli, cherry tomatoes, cucumber, and red onion. Add grilled chicken slices, sweet potato fries, and a dollop of tzatziki. Top with crumbled feta.
