Ingredients
2 boneless, skinless chicken breasts
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon lemon juice
1 large head romaine lettuce
1 cup cherry tomatoes
1 cup croutons
1 cup freshly grated parmesan cheese
1 cup Caesar dressing
Instructions
1. Combine olive oil, garlic powder, salt, pepper, and lemon juice in a small bowl. Rub the mixture onto the chicken breasts and marinate for at least 30 minutes.
2. Preheat a grill or grill pan over medium-high heat. Grill the chicken for 5–6 minutes per side, or until cooked through. Let rest for a few minutes, then slice.
3. Wash and dry the romaine lettuce thoroughly using a salad spinner. Chop into bite-sized pieces.
4. In a large bowl, toss romaine, cherry tomatoes, croutons, and half of the parmesan with Caesar dressing until evenly coated.
5. Arrange the grilled chicken slices on top and garnish with remaining parmesan. Serve immediately.
