Ingredients
1 lb fresh green beans
1/2 cup crumbled feta cheese
1/3 cup thinly sliced red onion
2 tbsp chopped fresh dill
2 tbsp olive oil
1 tbsp fresh lemon juice
Salt and black pepper to taste
Instructions
1. Bring a large pot of salted water to a boil. Add green beans and blanch for 2–3 minutes until bright green and just tender.
2. Immediately transfer the beans to a bowl of ice water to stop cooking.
3. Slice the red onion and chop the dill while beans cool.
4. Drain and pat the green beans dry with a towel.
5. In a large bowl, toss green beans with red onion, feta, dill, olive oil, and lemon juice. Season with salt and pepper.
6. Let the salad sit for 10–15 minutes before serving to allow the flavors to meld.
