Ingredients
4 large ripe tomatoes, sliced
1 large red onion, thinly sliced
8 oz block of feta cheese, cubed
1/2 cup Kalamata olives, pitted
1/2 cup green olives, pitted
1/4 cup fresh parsley, chopped
3 tbsp extra virgin olive oil
Pinch of red pepper flakes (optional)
Instructions
- Slice tomatoes into rounds and red onion into thin rings.
- Cube the feta cheese into large, stackable pieces.
- On a serving plate, arrange a base layer of onion rings.
- Add a layer of tomato slices, followed by feta cubes and olives.
- Sprinkle with parsley and drizzle with olive oil.
- Repeat layers until 3–4 tiers are formed.
- Garnish the top with feta, olives, parsley, and red pepper flakes.
- Let sit for 5–10 minutes before serving to allow flavors to meld.
