Ingredients
4 filet mignon or ribeye steaks
Salt and black pepper to taste
2 tablespoons olive oil
2 tablespoons butter
4 cloves garlic, minced
1/3 cup bourbon
1 cup heavy cream
1/2 cup beef broth
Fresh parsley, chopped (for garnish)
Instructions
- Let steaks come to room temperature for 30 minutes. Pat dry and season generously with salt and pepper.
- Heat olive oil in a cast-iron skillet over medium-high. Sear steaks for 3-4 minutes per side. For thick cuts, finish in a 400°F oven for 5-7 minutes. Remove and let rest.
- In the same skillet, reduce heat to medium. Melt butter, then add garlic and sauté until fragrant (1 minute).
- Carefully add bourbon, scraping the pan. Let alcohol cook off for 1-2 minutes.
- Add cream and beef broth. Simmer 4-5 minutes, stirring until slightly thickened. Season to taste.
- Return steaks to pan. Spoon sauce over top and heat 1-2 minutes.
- Garnish with parsley and serve hot.
