Ingredients

2 large boneless skinless chicken breasts
2 tablespoons olive oil
2 tablespoons fresh lemon juice
3 cloves garlic minced
1 teaspoon dried oregano
1 teaspoon smoked paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup uncooked quinoa
2 cups water or chicken broth
1/4 teaspoon salt
1/2 cup tahini
1/2 cup crumbled feta cheese
2 tablespoons olive oil
2 tablespoons fresh lemon juice
1 clove garlic
2 to 4 tablespoons warm water
1 tablespoon fresh dill or parsley chopped
1/4 teaspoon black pepper
1 cup cherry tomatoes halved
1 cup cucumber diced
1/4 cup red onion thinly sliced
1/3 cup kalamata olives
1/4 cup crumbled feta cheese
1 tablespoon fresh parsley chopped


Instructions

1. Marinate chicken with olive oil, lemon juice, garlic, oregano, smoked paprika, salt, and pepper for at least 30 minutes.
2. Grill chicken 5 to 7 minutes per side until internal temperature reaches 165°F. Rest and slice.
3. Cook quinoa with water or broth for 15 minutes, rest 5 minutes, then fluff.
4. Blend tahini, feta, olive oil, lemon juice, garlic, herbs, pepper, and warm water until smooth.
5. Assemble bowls with quinoa, chicken, vegetables, feta, and drizzle with sauce.

Notes

Marinating overnight enhances flavor.
Add warm water to thin sauce if needed.
