Tender beef strips are seared to perfection, mingled with savory mushrooms and onions, and coated in a silky sour cream sauce. Ingredients
1 lb beef sirloin or tenderloin, sliced thin
1 tablespoon olive oil
2 tablespoons butter, divided
1 medium yellow onion, thinly sliced
2 cups cremini or button mushrooms, sliced
2 garlic cloves, minced
1 teaspoon Dijon mustard
1 tablespoon Worcestershire sauce
1 cup beef broth
3/4 cup sour cream
Salt and freshly ground black pepper, to taste
2 tablespoons fresh parsley, chopped (for garnish)
Instructions
1. Heat olive oil and 1 tablespoon of butter in a heavy skillet over high heat.
2. Sear beef in batches for 1 minute per side, then remove and set aside.
3. Add remaining butter, then sauté onions until soft.
4. Add mushrooms and cook until golden brown. Stir in garlic.
5. Deglaze pan with beef broth and Worcestershire sauce, scraping up any brown bits.
6. Stir in Dijon mustard and let simmer for 3–5 minutes.
7. Lower heat and gently stir in sour cream until smooth.
8. Return beef to pan, stir to coat, and simmer until warmed through.
9. Season with salt and pepper. Garnish with parsley. Serve hot.

Use high-quality beef cuts for the most tender results.
Do not boil the sauce after adding sour cream to avoid curdling.
