Description
These Golden Melty Quesadillas are crisp on the outside, cheesy on the inside, and packed with seasoned ground beef and onions. They’re quick to make, easy to scale, and perfect for feeding a hungry group or meal-prepping for the week.
Ingredients
1 lb ground beef
1 medium yellow onion, diced
1 packet taco seasoning (or 2 tbsp homemade)
1/4 cup water
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
4 large flour tortillas (burrito-size)
2 tbsp butter or oil (for frying)
Optional toppings: diced tomatoes, sour cream, guacamole, cilantro
Instructions
1. In a skillet over medium-high heat, cook ground beef and diced onions until beef is browned and onions are soft. Drain excess grease.
2. Add taco seasoning and water to the skillet. Stir and simmer for 2–3 minutes until thick and saucy. Remove from heat.
3. Lay a tortilla flat. Sprinkle cheddar and Monterey Jack cheese on one half. Add a scoop of beef mixture, then top with more cheese. Fold the tortilla over.
4. In a clean skillet, melt butter or heat oil over medium. Place the folded quesadilla in the skillet and cook for 2–3 minutes per side until golden and crisp.
5. Remove from skillet, cool slightly, and slice into wedges. Serve with your favorite toppings.
Notes
Use freshly grated cheese for best meltability and flavor.
Don’t overstuff the quesadillas or flipping them becomes tricky.
If freezing, wrap tightly in foil and store up to 2 months—reheat in a skillet for crispy results.
