Ingredients

2 cups cooked chicken, shredded

1 package potato gnocchi

1 cup carrots, sliced

2 cups fresh spinach

1 small onion, diced

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 tablespoons olive oil

1 teaspoon Italian seasoning

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Heat olive oil in a large pot over medium heat and sauté onion and garlic until fragrant

2. Add carrots and cook for a few minutes until slightly softened

3. Pour in chicken broth and add shredded chicken then bring to a simmer

4. Stir in gnocchi and cook until they float to the top

5. Reduce heat and add heavy cream stirring until combined

6. Add spinach and seasonings then cook until spinach wilts

Notes

Use rotisserie chicken for quicker prep and extra flavor

Add gnocchi at the end to prevent overcooking

Swap heavy cream with half-and-half for a lighter version
