Description

These Garlic-Parmesan Chicken Bites are pan-seared to golden perfection and smothered in a creamy Cajun Alfredo sauce with sun-dried tomatoes. Served with crisp charred broccolini, it’s a flavorful, satisfying dish that’s perfect for weeknights and impressive enough for guests.


Ingredients

1.5 lbs chicken breast, boneless and skinless

1 cup freshly grated parmesan cheese

3 cloves garlic, minced

1 cup heavy cream

1/3 cup sun-dried tomatoes, sliced

1.5 teaspoons Cajun seasoning

2 tablespoons butter

1 tablespoon olive oil

1 bunch broccolini

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped parsley (optional garnish)


Instructions

1. Trim and cut chicken breasts into bite-sized chunks. Mince garlic, grate parmesan, slice sun-dried tomatoes, and rinse broccolini.

2. Heat olive oil and butter in a cast iron skillet over medium-high heat. Season chicken with salt, pepper, and Cajun seasoning. Sear until golden brown and cooked through. Remove and set aside.

3. In a small saucepan, melt butter and sauté garlic until fragrant. Add heavy cream and bring to a simmer. Stir in parmesan, sun-dried tomatoes, and remaining Cajun seasoning. Simmer until slightly thickened.

4. Toss broccolini with olive oil, salt, and pepper. Spread on a baking sheet and broil for 6–8 minutes until charred and tender.

5. Return chicken to skillet, pour Alfredo sauce over, and toss to coat. Serve with broccolini and garnish with parsley.

Notes

Use freshly grated parmesan for the creamiest, smoothest sauce—pre-shredded cheese won’t melt as evenly.

Don’t overcrowd the skillet when searing chicken or you’ll steam it instead of getting that golden crust.

You can easily adjust Cajun seasoning to match your spice preference—start light and build from there.
