Ingredients
1.5 lbs chicken breast or thighs, cut into bite-sized pieces
3 cloves garlic, minced
1 cup Parmesan cheese, freshly grated
1/2 cup sun-dried tomatoes, chopped
1 cup heavy cream
2 tablespoons Cajun seasoning
2 tablespoons butter
1 tablespoon olive oil (plus more for broccolini)
1 bunch broccolini, trimmed
Salt and pepper, to taste
2 tablespoons chopped parsley or basil (optional)
Instructions
1. Season the chicken pieces with salt, pepper, and 1 tablespoon Cajun seasoning.
2. In a hot skillet, add 1 tablespoon olive oil and 1 tablespoon butter. Sear the chicken pieces on medium-high heat until golden brown and cooked through. Remove and set aside.
3. In the same skillet, add more oil if needed. Add broccolini and let it char undisturbed for 1–2 minutes. Stir and cook until tender-crisp. Remove and set aside.
4. Lower heat to medium. In a small saucepan or the same skillet, melt 1 tablespoon butter and sauté garlic for 1–2 minutes.
5. Stir in sun-dried tomatoes and the remaining 1 tablespoon of Cajun seasoning.
6. Pour in the heavy cream and bring to a gentle simmer. Slowly whisk in Parmesan cheese until smooth and creamy. Season with additional salt and pepper if needed.
7. Return chicken to the skillet and stir to coat evenly in the sauce. Simmer for 2–3 minutes.
8. Serve chicken with extra sauce and charred broccolini on the side. Garnish with parsley or basil.
Notes
For the smoothest Alfredo sauce, blend sun-dried tomatoes into the cream before heating.
Don’t overcrowd the pan when searing chicken—it ensures a crispy edge and tender inside.
Broccolini can be swapped for asparagus or green beans but keep the char to preserve the flavor balance.
