Ingredients

2 boneless skinless chicken breasts

1 ½ pounds baby potatoes, halved

3 tablespoons olive oil

4 cloves garlic, minced

½ cup grated Parmesan cheese

3 tablespoons unsalted butter, cubed

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and pepper to taste

2 tablespoons chopped fresh parsley (for garnish)


Instructions

1. Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan.

2. In a bowl, toss halved baby potatoes with 1 ½ tablespoons olive oil, 2 minced garlic cloves, paprika, Italian seasoning, salt, and pepper. Spread them on one side of the baking dish.

3. Season chicken breasts with the remaining olive oil, garlic, salt, pepper, and a sprinkle of paprika. Place them beside the potatoes.

4. Sprinkle Parmesan evenly over both the chicken and potatoes. Dot everything with cubes of butter.

5. Cover loosely with foil and bake for 25 minutes. Remove foil and continue baking for another 15–20 minutes until chicken reaches 165°F and potatoes are golden and tender.

6. Garnish with fresh parsley and serve hot.
