Ingredients
1 lb chicken breast or thighs
3 tbsp garlic chili oil
8 oz rotini pasta
1 cup heavy cream
1 cup grated parmesan cheese
1 tbsp Cajun seasoning
2 medium zucchini, sliced
1 bell pepper (yellow or red), sliced
1 tbsp olive oil
½ tsp salt
¼ tsp black pepper
Instructions
1. In a bowl, mix chicken with garlic chili oil, salt, pepper, and Cajun seasoning. Let it marinate for 20–30 minutes.
2. Cook rotini pasta in salted boiling water until al dente. Drain and set aside.
3. Heat a cast iron skillet on medium-high. Add marinated chicken and sear for 6–8 minutes until golden and cooked through.
4. In a saucepan, heat olive oil and Cajun seasoning, then add heavy cream. Simmer until slightly thickened.
5. Stir in parmesan cheese and mix until smooth and creamy.
6. In the same skillet used for chicken, char the zucchini and bell peppers until tender and slightly smoky.
7. Toss the cooked rotini into the Alfredo sauce until evenly coated.
8. Plate the pasta with chicken on top and charred veggies on the side. Garnish if desired.
Notes
Let the chicken rest for a few minutes after cooking to retain juiciness before serving.
Don’t overcook the Alfredo sauce; it should coat the pasta, not clump.
Char the zucchini over high heat without moving it too much for the best texture and flavor.
