Ingredients
1 lb chicken breast, sliced into strips
3 cloves garlic, minced
1/4 cup soy sauce
1 cup chicken broth
1 tbsp cornstarch
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 cup broccoli florets
1 large carrot, julienned
2 green onions, chopped
3 cups cooked white rice
1 tbsp sesame oil (optional)
2 tbsp vegetable oil (for cooking)
Instructions
1. Slice chicken into strips, chop vegetables, and mince garlic. Set each aside.
2. In a bowl, whisk soy sauce, chicken broth, minced garlic, and cornstarch.
3. Heat oil in a wok or skillet over medium-high heat. Cook chicken until golden and cooked through. Remove from pan.
4. In the same pan, stir-fry carrots, bell peppers, and broccoli for 4–5 minutes until tender-crisp.
5. Return chicken to the pan. Pour in the garlic sauce and toss to coat evenly. Cook until the sauce thickens, about 2–3 minutes.
6. Serve over hot white rice. Garnish with chopped green onions and sesame oil if desired.
