Ingredients
1 lb boneless, skinless chicken breast, cut into bite-sized pieces
8 oz lo mein noodles (or spaghetti)
2 tablespoons vegetable oil
1 cup broccoli florets
1 medium carrot, julienned
1/2 cup sliced bell pepper (optional)
1/2 cup sliced onions
2 green onions, chopped
1 tablespoon minced garlic
1/2 tablespoon fresh ginger, minced (optional)
1/4 cup low-sodium soy sauce
1 tablespoon oyster sauce
1 tablespoon hoisin sauce
1 teaspoon sesame oil
1 teaspoon sugar
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
Salt and black pepper to taste
Instructions
- Boil water and cook noodles according to package directions. Drain, rinse with cold water, and toss with sesame oil.
- In a bowl, mix soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and cornstarch slurry.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add chicken pieces, season with salt and pepper, and cook until browned and fully cooked. Remove and set aside.
- Add remaining oil to the skillet. Stir-fry onions, garlic, and ginger for 30 seconds.
- Add broccoli, carrots, and bell peppers. Cook until just tender.
- Return chicken to the skillet, then add noodles and pour in the sauce.
- Toss everything together and stir-fry until evenly coated and heated through.
- Garnish with chopped green onions and serve hot.
