Ingredients
1 lb sirloin or ribeye steak, cubed
3 cloves garlic, minced
4 tbsp unsalted butter
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup grated Parmesan cheese
8 oz medium pasta shells
1 tbsp olive oil
1 tsp salt (plus more for pasta water)
1/2 tsp black pepper
2 tbsp fresh parsley, chopped
Instructions
1. Pat steak dry, cube into bite-sized pieces, and season with salt and pepper.
2. Heat olive oil in cast iron skillet over medium-high heat, sear steak bites 2–3 minutes per side. Remove from skillet.
3. Lower heat, melt butter in skillet, add minced garlic, cook 30 seconds.
4. Return steak bites, toss in garlic butter, keep warm.
5. Boil pasta shells in salted water until al dente, drain well.
6. In saucepan, heat cream over medium heat, stir in cheddar and Parmesan until smooth. Season with salt and pepper.
7. Toss pasta in sauce, plate alongside steak bites, garnish with parsley.
Notes
For best sear, ensure steak is patted dry before cooking.
Add cheese slowly to the sauce to prevent clumping.
Reheat gently with a splash of cream to restore sauce texture.
