Description

Ingredients

1 cup unsalted butter

8 oz dark chocolate (60–70% cocoa), chopped

1 1/4 cups granulated sugar

3 large eggs

3/4 cup all-purpose flour

1/4 cup cocoa powder

1/4 tsp salt

1/4 cup cherry liqueur (Kirsch or Amaretto)

1 cup cherries (jarred or fresh, pitted)

1/2 cup semi-sweet chocolate chips


Instructions

1. Place the cherries in a bowl and pour cherry liqueur over them. Let them soak for at least 30 minutes or overnight for deeper flavor.

2. Preheat oven to 350°F (175°C). Line a 9×9 baking pan with parchment paper.

3. In a heavy-bottomed saucepan, melt the butter and dark chocolate over low heat, stirring until smooth. Remove from heat and let cool slightly.

4. In a large bowl, whisk sugar and eggs until light and fluffy. Add in the cooled chocolate mixture and stir until well combined.

5. Sift in the flour, cocoa powder, and salt. Gently fold until just combined.

6. Drain the cherries and fold them into the batter with chocolate chips.

7. Spread the batter evenly into the prepared pan and smooth the top.

8. Bake for 30–35 minutes, or until the edges are set and the center is slightly gooey.

9. Let cool completely in the pan. Lift using parchment paper and slice into squares. Clean the knife between cuts for neat edges.

For best results, soak cherries overnight in liqueur for maximum flavor infusion.
