Description

This Frozen Meatball Pot Roast is the perfect weeknight dinner when you’re short on time but still want a meal that feels like a warm hug. Juicy frozen meatballs simmer slowly with hearty vegetables and rich gravy, creating a pot roast-style dish that’s incredibly easy and comforting. Serve over mashed potatoes or noodles for the ultimate one-pot meal.

Ingredients

24 frozen meatballs

3 carrots, peeled and chopped

3 celery stalks, chopped

1 medium onion, diced

3 cups beef broth

2 tablespoons Worcestershire sauce

1 teaspoon garlic powder

2 tablespoons cornstarch

3 tablespoons cold water

salt and pepper, to taste

Instructions

1. In a large Dutch oven or crockpot, add frozen meatballs, carrots, celery, and diced onion.

2. Pour in the beef broth. Stir in Worcestershire sauce, garlic powder, and season with salt and pepper.

3. Stir gently to mix the ingredients and coat everything in the broth.

4. For crockpot: cook on low for 6–7 hours or on high for 3–4 hours. For stovetop: bring to a simmer, cover, and cook on low heat for 1 hour, stirring occasionally.

5. In a small bowl, mix cornstarch and water to create a slurry. Stir it into the pot and cook uncovered for 10–15 minutes until the gravy thickens.

6. Serve hot over mashed potatoes, noodles, or rice. Garnish with chopped parsley if desired.

Notes

Use high-quality frozen meatballs for best flavor and texture—Italian-style or homestyle work well.

Don’t skip the cornstarch slurry; it’s key to turning broth into luscious gravy.

For added depth, sauté the onions before adding if cooking stovetop.
