Description
A light and refreshing summer salad with caramelized grilled peaches, juicy blueberries, fresh basil or mint, and a tangy balsamic drizzle — perfect for sunny days, cookouts, or a healthy snack.
Ingredients
2 large ripe peaches
1 cup fresh blueberries
2 tablespoons fresh basil or mint, chopped
1 tablespoon balsamic glaze
1 teaspoon olive oil
pinch sea salt
pinch black pepper
Instructions
1. Cut ripe peaches into wedges, brush lightly with olive oil, and sprinkle with a pinch of salt.
2. Heat grill or grill pan to medium-high. Grill peaches cut-side down for 2–3 minutes per side until grill marks appear and fruit softens.
3. In a mixing bowl, gently toss grilled peaches with blueberries and chopped basil or mint.
4. Drizzle with balsamic glaze, sprinkle with salt and black pepper.
5. Serve immediately while warm or at room temperature.
Notes
Use just-ripe peaches — too soft and they fall apart on the grill.
Add crumbled goat cheese or feta for a creamy twist.
Grill peaches ahead, but combine salad just before serving for best texture.
