French Onion Ground Beef Rice Casserole

Description

A cozy, family-friendly casserole that combines the savory flavor of French onion soup with hearty ground beef, tender rice, and melty cheese. Perfect for weeknight dinners, meal prep, or when you need a dish to satisfy everyone at the table.


Ingredients

1 pound ground beef

3 cups cooked white or brown rice

1 can (10.5 ounces) French onion soup

1 can (10.5 ounces) cream of mushroom soup

1 ½ cups shredded mozzarella cheese

1 cup shredded cheddar cheese

1 medium yellow onion, thinly sliced

½ teaspoon salt

¼ teaspoon black pepper

2 tablespoons chopped fresh parsley (optional)


Instructions

1. In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat and season with salt and pepper. Set aside.

2. In the same skillet, sauté the sliced onions over medium-low heat for 10–12 minutes, until caramelized and soft.

3. In a large mixing bowl, combine cooked rice, browned beef, caramelized onions, French onion soup, cream of mushroom soup, and half of the mozzarella and cheddar cheeses. Stir well.

4. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish. Spread the mixture evenly in the dish. Top with the remaining cheeses.

5. Bake uncovered for 25–30 minutes, until cheese is melted and bubbly. Optionally, garnish with chopped parsley before serving.

Notes

For deeper flavor, cook the onions low and slow to fully caramelize.

You can substitute ground turkey or chicken for a lighter version.

To freeze, wrap the baked casserole tightly and store for up to 2 months.
