Description

A cozy, flavor-packed dish that combines the richness of French onion soup with juicy, seared chicken breasts. Topped with melty Gruyère cheese and baked to perfection, this one-pan wonder is perfect for a hearty weeknight meal or an elegant weekend dinner.

Ingredients

Chicken Breasts

Yellow Onions

Beef Broth

Garlic

Gruyère or Swiss Cheese

Butter

Olive Oil

Salt & Pepper

Fresh Thyme (optional)

Instructions

  1. Caramelize the Onions: Slice onions thinly. Melt butter in a skillet and cook onions over medium heat for 20-25 minutes until deeply golden. Add garlic and cook for another minute.
  2. Sear the Chicken: Season chicken breasts with salt and pepper. Sear them in olive oil for 3-4 minutes per side until browned.
  3. Make the Sauce: Add beef broth to the caramelized onions, scraping the pan bottom. Simmer until slightly thickened. Add thyme if using.
  4. Assemble: Preheat oven to 375°F. Place seared chicken in a baking dish. Pour onion-broth mixture over top. Sprinkle with shredded cheese.
  5. Bake: Bake uncovered for 20-25 minutes. Broil for 2-3 minutes at the end for a golden, bubbly top.
