Ingredients
1 cup long grain white rice
2 medium sweet onions, thinly sliced
4 tablespoons unsalted butter
2 ½ cups beef broth
1 teaspoon salt
½ teaspoon black pepper
1 clove garlic, minced (optional)
1 tablespoon fresh parsley or thyme, chopped (for garnish)
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a cast iron skillet over medium-low heat, melt the butter and add the sliced onions.
3. Cook the onions slowly for 20–25 minutes, stirring often, until they are golden and caramelized.
4. In a large bowl, combine uncooked rice, beef broth, caramelized onions, salt, pepper, and garlic (if using).
5. Transfer mixture into an oven-safe baking dish or keep it in the same oven-proof skillet.
6. Cover tightly with foil or a fitted lid.
7. Bake for 35–40 minutes, or until rice is tender and liquid is absorbed.
8. Let rest for 5 minutes, then fluff the rice with a fork.
9. Garnish with parsley or thyme before serving.
Notes
Use sweet yellow onions for best caramelization.
Don’t rush the onion-cooking step; low and slow brings out the flavor.
If using brown rice, increase broth and baking time.
