These Freezer Breakfast Burritos are the ultimate make-ahead breakfast—packed with scrambled eggs, crispy bacon, roasted potatoes, and melted cheese. Perfect for busy mornings, meal prepping, or on-the-go fueling. They reheat like a dream and are customizable with all your favorite fillings!
Ingredients
8 large flour tortillas
8 large eggs
1 cup cooked and crumbled bacon or sausage
1 cup shredded cheddar or Monterey Jack cheese
1 ½ cups diced and roasted potatoes or hash browns
½ teaspoon salt
¼ teaspoon black pepper
½ cup chopped bell peppers
¼ cup diced onions
1 tablespoon hot sauce or salsa
Instructions
1. Preheat oven to 400°F. Spread potatoes or hash browns on a baking sheet, season with salt and pepper, and roast for 25–30 minutes until crispy.
2. Cook bacon or sausage in a skillet until browned and crisp. Drain on paper towels.
3. In a mixing bowl, whisk eggs with salt and pepper. Scramble in a nonstick skillet over medium-low heat until just set and fluffy.
4. Warm each tortilla in a dry pan for 10–15 seconds per side to make them pliable.
5. Lay tortillas flat. Fill with roasted potatoes, scrambled eggs, meat, and cheese. Add optional fillings as desired.
6. Fold in the sides of each tortilla and roll tightly into a burrito shape.
7. Wrap each burrito in foil or parchment paper, then place in a freezer-safe bag. Label and freeze for up to 2 months.
8. To reheat: Remove wrapping, microwave for 1–2 minutes (flip halfway), or reheat in oven/skillet for crispier texture.
Notes
Roast the potatoes well so they stay crispy even after freezing.
Let all fillings cool slightly before wrapping to avoid soggy tortillas.
Don’t skip warming the tortillas—it prevents cracking during assembly.
