Ingredients
3–4 lbs chuck roast
2 cups beef broth
1 medium onion, sliced
4 cloves garlic, minced
2 tablespoons Worcestershire sauce
2 tablespoons tomato paste
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon chopped fresh parsley (optional)
Instructions
1. Pat the chuck roast dry and season all sides with salt and pepper.
2. In a hot skillet with olive oil, sear the beef on all sides until browned.
3. Layer the sliced onions and minced garlic at the bottom of your slow cooker.
4. Place the seared beef over the onions and garlic.
5. In a small bowl, whisk together the beef broth, Worcestershire sauce, and tomato paste.
6. Pour the mixture over the beef, ensuring the liquid covers at least half the roast.
7. Cover the slow cooker with the lid and cook on LOW for 8 hours.
8. Once the beef is fork-tender, shred it in the pot and stir into the juices.
9. Garnish with fresh parsley if desired and serve hot.
Notes
Searing the beef isn’t mandatory, but it adds incredible depth of flavor—don’t skip it if you can spare the time.
If you like a thicker sauce, remove some liquid after cooking and simmer it on the stove to reduce before pouring back over the shredded meat.
