Ingredients
1 cup pumpkin puree
1 1/2 cups all-purpose flour
2 teaspoons baking powder
2 large eggs
1 cup milk
2 tablespoons brown sugar
2 teaspoons pumpkin pie spice
1 teaspoon vanilla extract
1/4 teaspoon salt
Butter for greasing the skillet
Instructions
1. In a large bowl, whisk together the flour, baking powder, pumpkin pie spice, and salt.
2. In a separate bowl, whisk the pumpkin puree, eggs, milk, brown sugar, and vanilla extract until smooth.
3. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
4. Heat a nonstick skillet or griddle over medium heat and add butter to coat the surface.
5. Pour about 1/4 cup of batter per pancake onto the skillet. Cook until bubbles form and edges set, about 2–3 minutes.
6. Flip and cook the other side for 1–2 minutes until golden brown.
7. Serve warm with maple syrup, chopped pecans, or whipped cream.
Notes
Don’t overmix the batter; a few small lumps ensure fluffy texture.
Use fresh baking powder for best rise and fluffiness.
Let the batter rest 5 minutes before cooking for even fluffier pancakes.
