Ingredients

1 ½ cups all-purpose flour

1 tablespoon baking powder

½ teaspoon salt

1 teaspoon granulated sugar

1 cup whole milk

⅓ cup olive oil

1 large egg

1 tablespoon fresh rosemary, chopped

¼ cup Parmesan cheese, shredded (optional)


Instructions

1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease lightly with oil.

2. In a large bowl, whisk together flour, baking powder, salt, and sugar.

3. In a separate bowl, whisk together the milk, olive oil, and egg until smooth.

4. Add wet ingredients into the dry and gently fold with a spatula until just combined. Do not over-mix.

5. Fold in chopped rosemary and optional Parmesan cheese.

6. Fill muffin cups evenly with batter using a spoon or scoop.

7. Top each muffin with a few rosemary leaves and an optional sprinkle of Parmesan.

8. Bake for 18–20 minutes or until golden on top and a toothpick comes out clean.

9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

Don’t over-mix the batter — stir just until combined for fluffy muffins.

Fresh rosemary gives the best flavor, but dried can work in a pinch (use less).

To reheat, pop muffins in the toaster oven for a few minutes to restore the crisp tops.
