Ingredients

3 cups shredded potatoes

1 cup king crab meat

2 tablespoons mayonnaise

1 teaspoon lemon zest

1 tablespoon chopped chives or parsley

1/4 teaspoon salt

1/8 teaspoon black pepper

2 tablespoons melted butter or cooking spray


Instructions

1. Grate the potatoes using a box grater or food processor.

2. Place grated potatoes in cheesecloth or a nut milk bag and squeeze out all excess moisture.

3. Lightly salt the potatoes and press them into a greased mini muffin tin to form nest shapes.

4. Bake at 375°F (190°C) for 20–25 minutes until golden and crisp.

5. In a bowl, mix the crab meat, mayonnaise, lemon zest, and chopped herbs. Season with salt and pepper.

6. Once nests are slightly cooled, spoon in the crab filling.

7. Optionally, return to the oven for 5 minutes to warm or serve chilled.

Notes

Make sure the shredded potatoes are fully dried before baking to get the crispiest nests.

Use fresh king crab for best results—frozen is acceptable if thawed and drained well.

Add a sprinkle of paprika or fresh dill to customize the flavor.
