Description

This Easy Stuffed Pepper Casserole delivers all the comforting flavors of stuffed peppers—without the fuss. It’s a family-favorite, one-pan meal packed with seasoned beef, colorful peppers, tender rice, and a cheesy topping.


Ingredients

1 pound ground beef

1 cup chopped green bell pepper

1 cup chopped red bell pepper

1 small onion, chopped

3 cloves garlic, minced

1 can (14.5 oz) diced tomatoes

1 can (8 oz) tomato sauce

1 cup uncooked white or brown rice

2 cups beef broth

1 ½ cups shredded cheddar cheese

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper


Instructions

1. In a large skillet, heat oil over medium heat. Add chopped onions and bell peppers. Sauté until softened, then stir in garlic and cook for 1 minute.

2. Add ground beef to the skillet. Cook until fully browned, breaking it up with a spoon. Drain excess grease.

3. Stir in diced tomatoes, tomato sauce, uncooked rice, Italian seasoning, salt, and pepper. Mix well.

4. Pour in beef broth, stir, and bring to a boil. Reduce heat, cover, and simmer for 20 minutes or until rice is tender.

5. Uncover and sprinkle cheddar cheese evenly over the top. Transfer skillet to the oven and broil for 2–3 minutes, or until cheese is melted and bubbly.

6. Let rest for 5 minutes before serving. Optional: Garnish with chopped parsley or a dollop of sour cream.
