Stuffed with savory ground beef, rice, tomato sauce, and topped with melty cheese, these Easy Stuffed Bell Peppers are a hearty dinner that’s easy to prepare and bursting with comfort. They’re perfect for weeknights, leftovers, or meal prep!
Ingredients
1 lb ground beef
1 cup cooked rice
4 large bell peppers (any color)
1 small onion, diced
2 cloves garlic, minced
1 cup tomato sauce
1 tbsp Worcestershire sauce
1 tsp Italian seasoning
½ tsp salt
¼ tsp black pepper
1 cup shredded cheddar or mozzarella cheese
Instructions
1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
2. Slice tops off bell peppers and remove seeds and membranes. Set upright in dish.
3. In a skillet, brown the ground beef and onion over medium heat. Drain grease.
4. Add garlic and cook for 1 more minute.
5. In a bowl, mix cooked beef, rice, tomato sauce, Worcestershire sauce, Italian seasoning, salt, and pepper.
6. Spoon the mixture into each pepper and top with shredded cheese.
7. Cover dish loosely with foil and bake for 30 minutes.
8. Remove foil and bake another 10–15 minutes until cheese is melted and bubbly.
9. Garnish with parsley if desired and serve hot.
Notes
Use bell peppers that are similar in size so they cook evenly.
You can swap the ground beef for ground turkey, chicken, or plant-based crumbles.
For extra flavor, add a sprinkle of parmesan on top before baking.
