Description

Creamy, vibrant, and bursting with Caribbean-inspired spice, this Easy Rasta Pasta combines tender rotini with colorful bell peppers, jerk-seasoned protein, and a luscious Parmesan cream sauce. Perfect for a bold and satisfying weeknight dinner.


Ingredients

12 oz rotini pasta

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 small onion, chopped

3 cloves garlic, minced

2 tbsp olive oil

1 lb chicken breast or shrimp, cleaned and sliced

2 tbsp jerk seasoning (adjust to taste)

1 1/2 cups heavy cream

1/2 cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil and green onions for garnish


Instructions

  1. Cook rotini pasta in salted water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté bell peppers, onion, and garlic until softened.
  3. Season chicken or shrimp with jerk seasoning. Grill or pan-sear until cooked through and slightly charred. Set aside.
  4. Lower the heat and add heavy cream to the skillet. Simmer gently.
  5. Stir in Parmesan cheese and more jerk seasoning as needed. Let the sauce thicken slightly.
  6. Add pasta and cooked protein into the skillet. Toss to coat evenly.
  7. Serve hot, garnished with fresh basil and green onions.
