Ingredients
1 cup unsalted butter, softened
0.75 cup powdered sugar
1.5 cups all-purpose flour
0.5 cup cornstarch
0.5 teaspoon salt
1 teaspoon pure mint extract
1 to 2 drops green gel food coloring (optional)
0.75 cup mini chocolate chips
0.5 cup powdered sugar, for coating
Instructions
1. Cream the butter and 0.75 cup powdered sugar using a hand or stand mixer until light and fluffy.
2. Add the mint extract and green food coloring, mixing until fully combined.
3. In a separate bowl, whisk together flour, cornstarch, and salt.
4. Gradually add the dry mixture to the wet ingredients until a dough forms.
5. Fold in the mini chocolate chips with a rubber spatula.
6. Scoop and roll tablespoon-sized dough portions into balls. Place on a parchment-lined baking sheet.
7. Bake at 350°F (175°C) for 10–12 minutes. Cookies should remain pale and not browned.
8. Let cool for 5 minutes, then roll warm cookies in powdered sugar. Once cooled completely, roll in sugar again for a thicker coating.
Notes
For extra minty cookies, increase the extract to 1.5 teaspoons, but taste as you go—mint can be overpowering.
Cookies freeze well for up to 2 months. Re-roll in powdered sugar after thawing.
Skip food coloring for a natural look or use plant-based dyes for a clean alternative.
